There is usually only 1 Coach attendant on the Eaglete for the Regular 2 Coach consist between Chicago and San Antonio. So when a Cutout Coach is on the consist between Chicago and St Louis, one of the Conductors handles the door in St Louis and other stops between Chicago and St Louis.

Good point! This was not addressed in the article, nor was how the Passengers transferring from the Eaglete to the Sunset will be accommodated in only 1 Sleeper and 2 Coaches between SAS and LAX.

Amtrak changed Suppliers for the Boxed Meals in Portland a few years back, and they are no longer very good.( the Breakfast loaded in Spokane has never been anything to write Home about) Portland has plenty of good places to eat, so having a late Lunch/early Supper is a good idea.

I never experienced the Starlight with Sleepers on the rear of the consist in all my years of riding, but as the PPCs aged, did see that CCCs and Regular Superliner Diners were substituted occasionally .
