One point not yet raised here is that you see the country from a different angle on a train. Homes and businesses are generally oriented to face roads. Trains often run past the backyard--literally and/or metaphorically.
 
Also It'd be a pretty slim dinner selection in the diner for dinner. Unless someone can provide more info on that.
Actually, it would be no dinner at all, you'd have to jump out and grab something at Albany. That may be enough to kill the idea. I don't know why Amtrak doesn't offer dinner on the eastbound LSL.
Not enough time to serve & clean-up, especially with the higher speeds between Albany & NY, coupled with the discharge only running from Albany on down. Things are just too unpredictable to reliably serve dinner.

That said, they do setup a small "cafe" type of service in the dining car where one can buy simple snacks and drinks. No hot food is served however!
