Just curious what the food/dining options are once 7 and 27 split. We will be going to Portland in a roomette, so curious if there will be a dining car for breakfast.

27 has a breakfast sandwich and some kind of continental/cold breakfast option from the cafe. 28 had a cold plate dinner (salads with and without meat) distributed by the SCA.

7 had full breakfast service. Seating typically stops upon reaching the west portal of the Cascade Tunnel if close to on time. 8 had normal dinner service.

27 / 28 have been running with a TransDorm on the end, and I doubt there is access to the railfan window.
On the very end of EB 7 have seen a baggage car - and - that TDorm car - - -
Imagine with all the late trains that Chicago is having one hell-of-a time putting together a consist - - -
Will let Spokane figure how to dissect the consist
And some of those EB 7 trains have sure been having engine troubles

The Dining Car goes with the Seattle section, and the Sightseer Lounge car goes to Portland. I think the Portland Sleeper breakfast nowadays is just choices from the Cafe. It used to be a ham-and-cheese croissant:

The Box Dinner on #28 out of Portland was great till Amtrak changed suppliers.

Breakfast on #27 out of Spokane was never very good, but sitting in the Sightseer Lounge rolling along the Columbia as the Sun came up, made it seem better!
