We are leaving tomorrow on the SW Chief in a bedroom from Chicago to San Diego. We would like to use the Fullerton bypass and take an earlier Surfliner. Will we be able to use the business class tickets? The tickets say train 768, but we would like to take 564 or 568 from Fullerton to San.
 
Coach on the Surfliner is unreserved, but BC is reserved and can only be used on that specific train! You can ask the conductor, but don't be surprised by a "No!" answer, especially if BC is full.

You may also want to try to call AGR and see if you can change your reservation to connect at FUL and get BC on that train!

If getting to SAN a bit earlier is more important that actually sitting in Business Class, I'm sure you can use your tickets on an earlier train at Fullerton. You can head to the Business Class car and explain to the conductor why you are on the earlier train. I think that 95% of the time, that will be fine. If you run into a situation where BC is full or the conductor is not cooperative, simply move to unreserved coach seating and use your BC ticket in coach. After two days en route from Chicago, I can see why you might like to gain an hour or two by boarding the Surfliner at Fullerton even if it means riding in coach.
