Three adults going on day trip from Chicago to Kansas City. Bedrooms are easily big enough for 3 people during the day. Can we upgrade?

3 adults is fine, yes. You'll have to call to do it, but it shouldn't be a problem.

You can actually do up to 4 adults in a bedroom, as long as the bedroom stays in daytime configuration (so there's seats instead of the two beds.) It's tight but quite doable.
