To save some money, I'm considering booking a roomette for my wife and little one (age 3), and booking coach for myself. Would I be able to join them in the dining room for meals, or is that not possible with a coach ticket?

Denver to Chicago would be the CZ with traditional dining, so you could join them.

Costs for diner meals for coach passengers are fixed price.
$20/breakfast
$25/lunch
$45/dinner, which includes dessert and an adult beverage, so it isn't as bad as it sounds at first.
 
To save a significant amount of money, consider getting the roomette from Denver to Omaha for them and you book yourself in coach all the way to Chicago. In Omaha the train is in station for 10-16 minutes (refueling) which is plenty of time for them to leave the roomette and join you back in coach. The CZ is in OMA at 5AM central time (possibly late). The last 9.5 hours into Chicago will be in daylight. All of you can go to breakfast while rolling across Iowa or you can visit the cafe on the lower level of the observation car. Pack a small cooler with food that you all like.
