My "standard" breakfast on board a train is:

-French toast

-Bacon

-Coffee

-Orange juice

I love the french toast...and I've had bad luck with the scrambled eggs in the past. However, I will be trying the Builder's made-to-order eggs.*

*The food on board is going to be a major determinant in whether I pick the Builder or the Zephyr for trips to Boise in the future.

the French Toast.

It has a special place in my heart as it's the first thing I ever ate on a train and the whole experience, 6am on the TE, was heavenly.

On the CZ earlier this month, we also had French Toast one way and Pancakes the other.

They also had Crab Cakes for Breakfast on the east bound train, I didn't partake but those that did raved about them.

Breakfast crabcakes? That's a first...I know the Cap has usually had them for dinner, but I've never heard of them in the morning.

My best guess is that they were somehow overstocked on them after dinner the night before, so the OBS decided to improvise.

Yeah, the crab cake breakfast special was offered on the 5 when I rode it. I believe it was described as a crab cake on a biscuit and covered with a hollandaise(?) sauce. That didn't sound very appealing to me but I did have the crab cakes for dinner once on the 6 and they were... meh...

As a former Marylander, I can tell you that there are lots of people who will eat crabs at any hour of the day. In fact, some restaurants offer "Eggs Maryland" or similar, which is basically Eggs Benedict with crabmeat. Drat, this thread is making me hungry.

I'm not a Marylander, but that sounds very good -- although it'd be better if there were also an egg involved, as there would be with the "Eggs Maryland" CHamilton mentioned. But either way, I wouldn't mind "AmCrab Benedict" becoming a regular breakfast menu item.

While Crab Meat may not be the most popular selection on the Texas Eagle, they have been known to throw a Breaded Chicken Breast with Gravy over Biscuits onto the breakfast menu and it hasn't been too bad the couple times I've had it.

While we're talking about food....

I would love it if Amtrak would team up with Mario Batali for a special dish on each menu.

I say Mario because he LOVES the train and says it's the best way to travel.

He waxed poetic about it on the daytime show - The Chew - that he's a part of.

Might not be to everyone's taste but I think it's one of those things that would add a little cachet to the Amtrak experience

Tom Douglas, the restauranteur from here in Seattle, is working with Amtrak. I'm looking forward to seeing what he comes up with, as his restaurants are well-regarded. I've eaten at some of them, and have never been disappointed.

My favorite French Toast is "À la vôtre!" Though, "à votre santé" may be more acceptable amongst polite company.

On our trip west on the Sunset Limited a while back, I was looking forward to a pancake breakfast, but they had French toast instead, and my hubby ordered that. I think I got something else entirely, but can't remember what it was. On the return trip, they offered pancakes! I ordered those but found them uninteresting but it did fill the hole.
