Those precut bags of lettuce you get in the supermarket usually have a Use By Date 5 or 6 days out, so 3 days should be no problem if it's stored unopened at the proper temp & humidity.
I had a Dole bag of pre-cut Caesar Salad yesterday 5 days past the "Best If Used By" date. Kept in the refrigerator and not a problem at all. Smelled fine and tasted fine. "Best If Used By" date is a sales gimmick. Use common sense and your senses.
 
I've always wondered, can Amtrak not do a quick restock at a station along the route instead of just being out of something for the remainder of the route? Or am I being too smart and expecting management to figure out stuff like that?
Maybe have a contract with Walmart for food and other supplies as needed. Let's start with salads; if Walmart can offer about 10 different kinds of GOOD salads for $3-4 each, then maybe that is where Amtrak should look.

And Walmart is well-distributed nationwide, so it wouldn't be a problem arranging for a van from the local Walmart to meet the train at most stations.
 
Would health officials allow it? The local grocery store chain here in Iowa/IL has sit down restaurants. They aren’t allowed to source most ingredients from the store though. If they run out of ketchup it‘s apparently not as easy as running to aisle 12 to get it. Weird health department rules in some states.
 
Any re-stocking by anyone but the contracted provider (Aramark?) would be for emergency rations only. (KFC, Subway sandwiches, etc.)
