As to which side, standard sleepers run either end forward and do. They'll be oriented whichever way they were facing when switched into the consist. However, transition-dormitory cars run with a standard orientation, the lower/transition end forward. Odd numbered roomettes are on the left (ocean) side.
I think the Starlight is currently running with a transdorm, it has been on and off. The downside of the transdorm is you will at least 2 cars from the diner and 3 from the Sightseer. Often they do not have a dedicated attendant and the attendant from the adjoining sleeper covers both, so it can become the Land of the Lost.
Assuming a transdorm is running, it'll be the 40 car line on the Starlight if memory serves.
