Obviously, you neither read nor write very often, or care to be understood.
If you are going to communicate other than with your voice, it's very important. Many words sound the same, but are spelled differently and have different meanings.

In the last several years Conductors have been encouraged to report mechanical defects to the National Operations center to make sure problems are documented in the computer. It certainly doesn't solve the problem but does ensure problems are documented.

That is really quite scary.

Note "Conductors have been "ENCOURAGED to report". The word "ENCOURAGED" is the key word here.
I have seen the Bad Order forms which are sometimes left in the baggage area by lazy SCAs who couldn't be bothered to put them away.
Several instances of multiple trips SAS-CHI with the same problem reported but never fixed.

I find it fairly pedantic to hold up internet randos in a forum to the same standard as a publication passengers rely on to make decisions affecting their health.

If they can't get the name of the train right, how can we trust they didn't mix up the calorie counts or the ingredient list?

Amtrak using 21st century devices? Look how long it took to get scanners for conductors! And I have yet to see an SCA looking at an electronic device in lieu of their printouts of their passengers. And Amtrak is probably waiting for the 22nd century to install any kind of customized electronic services to provide passengers at unmanned stations with anything more than arrival guesstimates.

I refer to a large pad of NCR paper forms. Top copy should go to receiving station, 2nd to writer's files, 3rd stays in form book for reference and for signoff when repairs are done. I see lots of things writen up multiple times, yets the error appears to be ignored.

The rest - well, they are usually the folks who can't make change if the cash register doesn't do it for them, and couldn't be bothered to try. One of the saddest cases I ever encountered was when the cashier couldn't figure out how to make change, handed me back my $20 bill for a $13.57 purchase and said "that's OK - the line is getting too long".

On a positive note, whatever was served HAD to be better than the slop we have been getting for over a year. Although I am not happy there was a failure, I applaud the effort that was made to make as many people happy as possible.
Frankly, if you are gluten intolerant, lactose intolerant, diabetic, have peanut or other allergies, don't like brussels sprouts or net caught tuna, or if you suffer from any of the other modern day afflictions, I opine that it is YOUR responsibility to ensure you won't end up flopping around on the floor.
AMTRAK operates a transportation service, not a hospital dietary kitchen.

I called about my JCPenny payment due as I had not received a statement. I asked what made up my balance and the Synchrony bank customer service kept adding the minimum amount due to try to get to the balance. She told me she couldn’t add.
P.S. I had called a week before to get a copy of my statement. I had no internet at the time to go on line for this.

You’re going overboard with this.
Spelling mistakes are funny, and the one Amtrak made certainly doesn’t fail to deliver laughs.

The amount of privilege you bring to your post is evident. Some people have more important things to worry about than making sure they write correctly in every moment.

Graciousness is always a better route than making fun of those who struggle.

The ersatz "Enchiladas" are noted as "Vegan".
The dry, overcooked and impossible to chew Red Wine Braised Beef is noted as "Gluten Free"
That according to the menu on the Texas Eagle Wed/Thurs of this week, and on the Capitol Limited Thursday and today.
To be fair, on Wednesday my daughter had "Fettucini" and declared it edible, but we have never before seen GRAY broccoli. The "Pasta and Meatballs" - well, theh meatbalss were pretty tasteless and the pasta (Ziti?) was about half overcooked and dried out, the rest edible.
For the rest of the journey we have eschewed this slop and dined on our food, hot and cold, from our Food Support System brought aboard, including hot coffee and hot sandwiches. The Service Attendants did give us the liquor ration in lieu of the food, kind of them. The white wine is undrinkable according to my daughter, who isn't even a wine snob. The red can be consumed, in a pinch. I of course had my flask of corn squeezings.
And in Chicago yesterday afternoon we had a Lucullan feast from the Italian Village, a few blocks away from Union Station. HIGHLY recommended.

Not aware of a pizza party. We've encountered the FLEX chazerai before. It seems some trains are getting dining back. Not sure about the Texas Eagle, which appears to be a redheaded ******* stepchild like the CONO and Capitol Limited. No Sightseer Lounge on the Eagle now, despite the fact that the train is usually quite full.

Besides the pizza, I am pretty sure nothing else was offered. Maybe something from the cafe car but officially it was a pizza party or bust! I don't believe that any of the flex meals were even on board with the return of traditional dining. But as I said, we had a great time (free drinks helped) and the staff made the best of a bad situation. Made a few more friends as well!

I have seen that deployed once for Coach pax; giant industrial size cans dumped into a pot and slung over rice. At least I was in Sleeper where we got to chose from what was still left from the menu fare.

I would prefer a can of Dinty Moore Beef Stew in a bowl any time over the slop now being foisted upon us. I always have a couple of cans in the larder, along with Mary Kitchen Hash, SPAM singles and Wolf Brand Chili.
